With Father’s Day just around the corner, or any occasion where you want to impress with minimal fuss, this recipe is a true game-changer. Imagine serving up tender, juicy pork chops bursting with that authentic BBQ smoke flavor, all prepared in a fraction of the time you’d expect. The best part? It’s incredibly simple to execute, promising fantastic results every single time, even for novice grill masters.

The Magic of “Quick Smoking” on Your Gas Grill

Traditional smoking can be a time-consuming affair, often requiring 8 hours or more of constant attention to “babysit” the meat and maintain consistent temperatures. While the results are undeniably rewarding, the time commitment often makes it impractical for many home cooks. Like many of you, I rarely have the luxury of dedicating a full day to smoking. This led me on a quest for a faster, more accessible method that wouldn’t compromise on flavor.

My research led me to an ingenious technique perfected by the culinary experts at America’s Test Kitchen. Their method for quick smoking on a gas grill truly “worked like a charm.” Instead of a whole day, these delectable pork chops were infused with rich smoky goodness in approximately an hour – and that’s including crucial preheat and resting times! This revolutionary approach means you can enjoy the deep, complex flavors of smoked meat on a whim, transforming your gas grill into a surprisingly efficient smoker.

Crafting Your Ideal Smoke Profile and Flavor Pairings

One of the most exciting aspects of this quick smoking method is the ability to easily customize your flavor profile by selecting different types of smoking wood chips. Each wood offers a unique aroma and taste that can perfectly complement the pork. For this recipe, I opted for apple wood chips, which impart a wonderfully subtle, sweet, and fruity smoke flavor that’s not overpowering. This delicate smokiness creates a perfect canvas for your favorite BBQ sauce.

To truly elevate these chops, I paired them with a sweet BBQ sauce. My personal preference is Stubb’s Sticky Sweet BBQ Sauce, which creates a heavenly caramelized glaze that perfectly balances the smoky notes. However, feel free to choose any BBQ sauce that tantalizes your taste buds – whether it’s tangy, spicy, or extra sweet. If you’re someone who craves a more robust, intense smoke flavor, consider using hickory wood chips. Hickory delivers a classic, strong smoky punch that many BBQ enthusiasts adore, while mesquite or oak offer even bolder, more assertive profiles. Experimenting with different wood types and sauces allows you to discover your ultimate quick smoked pork chop combination!

Perfect Pairings: What to Serve with Your Smoked Chops

No delicious main course is complete without equally delectable side dishes. These yummy quick smoked BBQ pork chops pair beautifully with a variety of classic BBQ sides, creating a truly satisfying and flavorful meal. For a complete feast, I highly recommend serving them alongside my:

  • Creamy Coleslaw: The cool, crisp, and slightly tangy nature of coleslaw provides a refreshing contrast to the rich, smoky pork chops. It’s a classic pairing for a reason!
  • Bacon Baked Beans: Hearty, sweet, and savory baked beans, especially with the added smoky depth of bacon, complement the BBQ flavors of the pork chops perfectly, adding a comforting element to your plate.
  • Parmesan Garlic Grilled Corn: Grilled corn on the cob, especially when infused with a savory Parmesan garlic butter, brings a vibrant, fresh, and slightly charred sweetness that harmonizes wonderfully with the smoky pork.

Together, these sides create a well-rounded and incredibly tasty meal that’s sure to be a hit with family and friends.

Essential Tips for Quick Smoked Pork Chops Success

While this method is incredibly straightforward, a few key tips will ensure your quick smoked pork chops turn out perfectly tender, juicy, and packed with flavor:

  1. Choose the Right Thickness: This is crucial for achieving that beautiful smoke flavor. Avoid thin pork chops at all costs! They will cook too quickly, preventing them from absorbing enough of that aromatic smoke. I strongly recommend using bone-in pork chops that are at least 1-inch thick. Thicker cuts (up to 1.5 inches) are even better, as they allow for more smoke absorption and remain juicier.
  2. Proximity to Smoke is Key: For maximum smoke penetration in a short amount of time, position your pork chops as close to the smoke pack as safely possible without direct contact with the flames. This ensures they are constantly bathed in delicious smoke during the initial cooking phase.
  3. Select Your Wood Wisely: As mentioned, your choice of smoking wood chips dramatically influences the final flavor.
    • For a **subtle, milder smoke taste**, opt for fruitwoods like apple, peach, or cherry. These are great if you prefer a less intense smoky flavor that allows other seasonings and sauces to shine.
    • For a more **robust, deeper smoke flavor**, choose hardwoods such as hickory, mesquite, or oak. These impart a more traditional, strong BBQ essence that stands up well to bold sauces.
  4. Monitor Internal Temperature: Pork chops are best when cooked to an internal temperature of 140°F (60°C). Use a reliable instant-read thermometer inserted into the thickest part of the chop, avoiding the bone. The temperature will rise a few degrees during resting. Overcooked pork chops can become dry and tough, so pulling them off at the right moment is essential.
  5. Don’t Skip the Rest: Once removed from the grill, tent your pork chops loosely with aluminum foil and allow them to rest for 5 minutes. This vital step allows the juices to redistribute throughout the meat, ensuring every bite is tender and moist.
  6. Grill Setup Matters: This recipe utilizes indirect heat for cooking. Make sure your primary burner is on high with the smoke pack, and all other burners are off. This creates a hot, smoky zone directly over the smoke pack and a cooler, indirect cooking zone where the chops will finish cooking. Maintaining a consistent grill temperature (around 300-350°F / 150-175°C in the indirect zone) is important.
  7. Seasoning: While the BBQ sauce provides a lot of flavor, don’t forget to season your pork chops with salt, pepper, and your favorite dry rub before placing them on the grill. This builds an additional layer of flavor and helps create a delicious crust.

By following these tips, you’re well on your way to mastering quick smoked BBQ pork chops!

Ingredients

  • 4-6 bone in 1″ pork chops
  • 2 cups smoking wood chips
  • 1 cup bbq sauce I like Stubb’s Sticky Sweet
  • Heavy duty aluminum foil

Instructions

  • Soak your wood chips in water for 15 minutes. Using a large piece of heavy-duty aluminum foil, wrap up your soaked wood chips tightly. Form a long, narrow packet, approximately 8×4 inches (refer to the photos above for visual guidance). Be very careful not to poke holes in the sides or bottom of the packet, as we want the smoke to escape only from the top. Once sealed, cut four evenly spaced slits across the top surface of the foil packet.
  • On your gas grill, carefully remove the cooking grate directly above the primary burner. Place your prepared smoke pack on top of this burner, then return the grate to its position. Close the grill lid and turn the primary burner to high. Allow the grill to preheat for at least 15 minutes, or until the smoke pack begins to emit a steady stream of smoke. Once preheated, clean and oil your grill grates. Keep the primary burner on high, but turn all other burners off to create an indirect cooking zone.
  • Place the pork chops on the clean, oiled grates, as close to the smoking foil pack as possible without being over direct flame. Close the grill lid and cook for 3 minutes on each side. After the first flip, brush one side of the chops generously with BBQ sauce, flip them again, cover, and cook for another 3 minutes. Then, brush BBQ sauce on the remaining side, flip once more, cover, and cook for a final 3 minutes. Remove the chops from the grill as soon as they reach an internal temperature of 140°F (60°C) when measured with an instant-read thermometer. Transfer the cooked chops to a platter, tent loosely with aluminum foil, and let them rest for 5 minutes before serving. This allows the juices to redistribute, ensuring tender and moist results.

Notes

Important: Do not use pork chops thinner than 1 inch. For best results, 1.25 to 1.5 inches is ideal.
*Cooking times are estimates and will vary based on the thickness of your meat and the specific heat retention of your grill.
