Essential Ingredients for Your Perfect Cashew Chicken

Crafting this fantastic Cashew Chicken relies on a combination of fresh produce and key pantry staples that bring authentic Asian flavors to life. Let’s break down what you’ll need:

For the Main Stir-fry:

  • CHICKEN: I typically use lean **chicken breast** for its quick cooking time and tender texture when cut into bite-sized pieces. However, if you prefer a richer flavor and even juicier results, boneless, skinless chicken thighs are an excellent alternative. Ensure your chicken is cut into uniform pieces for even cooking.
  • BELL PEPPER: Bell peppers add a wonderful sweetness, crunch, and vibrant color to the dish. Feel free to use **any color bell pepper** you like – red, yellow, orange, or green work beautifully, each offering a slightly different flavor profile and nutritional benefits. Dice them into large, manageable pieces.
  • CASHEWS: The star of the show! Cashews provide that essential buttery, nutty flavor and a satisfying crunch that defines Cashew Chicken. For an extra boost of flavor and a deeper golden hue, consider **toasting the cashews** in a dry skillet for a few minutes before starting the recipe. This simple step unlocks their full aromatic potential.
  • GINGER AND GARLIC: These aromatic powerhouses are the backbone of almost every delicious Chinese stir-fry. Freshly **grated ginger** and **minced garlic** will infuse your chicken and vegetables with an unparalleled depth of flavor. Avoid pre-minced versions for the best taste.
  • GREEN ONION: Also known as scallions, green onions offer a mild, fresh oniony bite and a beautiful pop of color as a garnish. They are incorporated both during cooking and as a fresh finish.

For the Irresistible Sauce:

The magic of Cashew Chicken truly comes alive with its perfectly balanced sauce – a delightful mix of sweet, savory, and a hint of spice. Here are the components:

  • WATER: The base of our sauce, helping to bring all the flavors together.
  • SOY SAUCE: Provides the fundamental savory, umami flavor. For a healthier option, you can opt for low-sodium soy sauce. For a gluten-free version, use tamari.
  • HONEY: Adds a natural sweetness and a lovely glaze to the sauce, balancing out the savory notes. Maple syrup can be a good substitute if you prefer.
  • CORNSTARCH: This is our thickening agent. It creates that signature velvety texture that coats every piece of chicken and vegetable, ensuring the sauce adheres beautifully.
  • SESAME OIL: A small amount of toasted sesame oil adds a distinctive nutty, aromatic depth that is characteristic of Asian cuisine. It’s usually added at the end for maximum flavor.
  • CHILI PASTE: For a touch of heat and complexity. I recommend starting with 1 teaspoon and then adjusting it to your personal preference. Sriracha or sambal oelek are great choices. If you prefer a milder dish, you can omit it.

How to Prepare Your Delicious Cashew Chicken: A Step-by-Step Guide

This Cashew Chicken recipe is designed for simplicity and speed, making it an ideal choice for any home cook. The key to its success lies in efficient preparation and understanding the flow of a stir-fry. I strongly recommend getting all your ingredients prepped and measured out before you even turn on the stove – this culinary technique, known as “mise en place,” ensures a smooth and stress-free cooking process.

  1. Prepare the Flavorful Sauce:

Your first step is to create the heart of the dish: the sauce. In a medium bowl, simply whisk together all the sauce ingredients – water, soy sauce, honey, cornstarch, sesame oil, and chili paste. Whisk vigorously until the cornstarch is completely dissolved and the mixture is well combined. Set this aside; having it ready beforehand means you can quickly add it when the stir-fry is at its peak.

  2. Cook the Chicken and Aromatics:

Heat 1 tablespoon of your preferred cooking oil (such as vegetable, canola, or peanut oil) in a large skillet or wok over medium to medium-high heat. Once the oil is shimmering, add your bite-sized chicken pieces, diced bell pepper, grated ginger, and minced garlic. Stir-fry constantly, breaking up any chicken clumps, until the chicken is cooked through and no longer pink in the center. The bell peppers should be tender-crisp – still retaining a slight bite but softened. This usually takes about 5-7 minutes. Avoid overcrowding the pan, as this can steam the ingredients rather than sear them; if necessary, cook in batches.

  3. Finish and Thicken the Dish:

Once the chicken and vegetables are perfectly cooked, it’s time to bring everything together. Give your prepared sauce another quick whisk, as cornstarch can settle at the bottom. Pour the sauce directly into the skillet with the chicken and vegetables. Immediately add the cashews and the green onions. Continue to stir and cook over the heat. As the sauce heats up, the cornstarch will activate, and the sauce will begin to thicken rapidly, turning into a glossy, delicious coating. This usually takes only 1-2 minutes. As soon as the sauce reaches your desired consistency – a nice, thick glaze – remove the skillet from the heat immediately to prevent overcooking the chicken and vegetables, or making the sauce too thick.

Serve your glorious homemade Cashew Chicken hot, preferably over steamed white or brown rice, or even noodles, for a complete and utterly satisfying meal. Garnish with a sprinkle of extra green onions or sesame seeds for an added touch of freshness and visual appeal.

Tips for the Best Homemade Cashew Chicken

  • Mise en Place is Key: As mentioned, have all your ingredients chopped, measured, and ready to go before you start cooking. Stir-fries cook quickly, and you won’t have time to chop garlic once the chicken is sizzling!
  • Don’t Overcrowd the Pan: For perfectly seared chicken and crisp-tender vegetables, avoid overloading your skillet. Cook in two batches if necessary. This allows the ingredients to brown rather than steam, locking in flavor and texture.
  • High Heat, Quick Cook: Stir-frying demands high heat. This ensures your ingredients cook quickly, maintaining their texture and preventing them from becoming soggy.
  • Customize Your Vegetables: While bell peppers are classic, feel free to add other quick-cooking vegetables like broccoli florets, snap peas, sliced carrots, water chestnuts, or mushrooms. Add harder vegetables earlier with the chicken, and softer ones later.
  • Spice it Up (or Down): Adjust the amount of chili paste according to your heat preference. For more heat, add extra chili paste or a pinch of red pepper flakes. For less, omit it entirely.
  • Toast Your Cashews: Don’t skip the optional step of toasting your cashews! It significantly enhances their nutty flavor and adds another layer of depth to the dish.
  • Marinade for Extra Tenderness: For an even more tender chicken, you can quickly marinate the bite-sized chicken pieces in 1 tablespoon of soy sauce and 1 teaspoon of cornstarch for 10-15 minutes before cooking. This helps to lock in moisture.

Serving Suggestions and Pairings

This Cashew Chicken is a complete meal on its own, but it truly shines when paired with simple accompaniments that complement its rich flavors:

  • Steamed Rice: Fluffy white jasmine rice or wholesome brown rice are classic choices, perfect for soaking up every drop of that delicious sauce.
  • Noodles: Serve it alongside a bed of stir-fried noodles or simple boiled egg noodles for a heartier meal.
  • Light Salad: A refreshing side salad with a ginger-sesame dressing can balance the richness of the stir-fry.
  • Additional Steamed Vegetables: For a boost of greens, steam some broccoli, green beans, or asparagus to serve on the side.

Ingredients

  • pounds (680g) chicken breast, cut into bite sized pieces
  • 1 large bell pepper, large dice
  • 2 teaspoons grated ginger
  • 2 cloves garlic, minced
  • 1 cup (125g) cashews
  • 4 green onions, cut into ½” pieces

SAUCE:

  • ¼ cup (60ml) water
  • ¼ cup (60ml) soy sauce
  • 1 tablespoon cornstarch
  • 3 tablespoons honey
  • 1 teaspoon sesame oil
  • 1 teaspoon chili paste (or more to your liking)

Instructions

  • In a medium bowl, whisk together the water, soy sauce, cornstarch, honey, sesame oil, and chili paste until smooth. Set this delicious sauce aside.
  • Heat 1 tablespoon of oil in a large skillet or wok over medium to medium-high heat. Add the chicken, bell pepper, grated ginger, and minced garlic. Cook, stirring frequently, until the chicken is no longer pink and the bell pepper is tender-crisp, about 5-7 minutes.
  • Give the reserved sauce another quick whisk. Pour it into the skillet along with the cashews and green onions. Cook, stirring constantly, just until the sauce thickens to a glossy consistency and coats all the ingredients. Remove from heat immediately to maintain the tender-crisp texture of the vegetables and prevent the sauce from becoming too thick. Serve hot and enjoy!

Notes

  1. STORAGE: Store any leftover Cashew Chicken in an airtight container in the refrigerator for up to 4 days. While technically possible, freezing is generally not recommended as the sauce can separate and the vegetables might become overly soft upon reheating, compromising the texture.
  2. This is a really simple and fast dish. I strongly recommend making the sauce first so it’s ready when you need it. Also, prep all your ingredients before you get started (this is called “mise en place” and it makes stir-frying much easier!).
  3. For an extra boost of flavor and a deeper nuttiness, toast the cashews in a dry skillet over medium heat for 3-5 minutes, stirring occasionally, before starting the recipe. This enhances their natural oils and crunch.
