  • 1 tablespoon lemon juice

Instructions

Instant Pot:

  • Wash, core, and quarter your apples. (Peel if you prefer a perfectly smooth texture and don’t have a high-powered immersion blender or food processor to handle the skins.)
  • Place all ingredients into a 6qt or larger Instant Pot and stir to combine thoroughly. Close the lid and turn the valve to the “sealing” position. Cook at high pressure for 8 minutes. Once cooking is complete, allow for a natural release of pressure. I generally don’t recommend a quick release for applesauce to prevent spray, but if the pin hasn’t dropped after 15 minutes, you can carefully do a quick release to release any remaining pressure.
  • Once the pressure has fully released, open the lid. Blend the softened apples with a potato masher for chunky applesauce, or use an immersion blender, food processor, or food mill for a smoother consistency. Allow the applesauce to cool completely before transferring it to an airtight container for storage.

Slow Cooker:

  • Wash, core, and quarter your apples. (Peel if you prefer a perfectly smooth texture and don’t have a high-powered immersion blender or food processor.)
  • Place all ingredients into a 6qt slow cooker and stir to combine thoroughly. Close the lid and cook on LOW for 6-8 hours or on HIGH for 3-4 hours, until the apples are very tender and easily mashed.
  • Blend the cooked apples with a potato masher, immersion blender, food processor, or food mill to achieve your desired consistency. Let it cool completely before transferring to an airtight container for storage.

Stove Top:

  • Wash, core, and cut your apples into small, uniform chunks. (Peel if you prefer a perfectly smooth texture and don’t have a high-powered immersion blender or food processor.)
  • Add the chopped apples and all remaining ingredients to a large stock pot or Dutch oven. Stir well to combine. Cover the pot and bring the mixture to a gentle simmer over medium heat. Once simmering, reduce the heat to low and cook for approximately 25 minutes, stirring frequently, until the apples are very soft and easily mashed.
  • Blend the softened apples with a potato masher for a chunkier texture, or use an immersion blender, food processor, or food mill for a smooth consistency. Allow the applesauce to cool completely before transferring it to an airtight container for storage.

Notes

  1. Don’t be alarmed: the applesauce will thicken considerably once it cools. It will also taste differently and often more intensely flavored once it has cooled, so wait until it’s cool to make final adjustments to sweetness if needed.
  2. Storage: Place cooled applesauce in an airtight container and refrigerate for up to 10 days. Or freeze for up to 3 months. For canning, I haven’t tried it with this specific recipe, so I can’t provide instructions. A reliable reference for canning applesauce is Ball Fresh Preserving.
  3. If you prefer plain applesauce without any added spices, simply omit the vanilla, cinnamon, and allspice from the ingredient list. The apples and lemon juice alone make a lovely, pure applesauce.
  4. I suggest using a variety of apples that you enjoy snacking on plain for the best, most balanced flavor. If you are using particularly tart apples, you might want to sweeten the applesauce. Just add your desired sweetener (brown sugar, honey, maple syrup) along with the other ingredients before cooking, and adjust to taste once cooled.
