What sets this recipe apart from many “French toast casseroles” is that it results in beautifully defined individual servings, just as French toast should be, rather than a dense, bread pudding-like dish. It’s incredibly quick and easy to assemble, making it a favorite for both novice and experienced home cooks.
This versatile dish goes by many names – “baked French toast,” “French toast casserole,” “French toast bake,” or even “company French toast.” No matter what you call it, the result is always a comforting, satisfying meal that will impress your family and guests. The overnight soak allows the bread to fully absorb the rich custard, ensuring every bite is moist, flavorful, and wonderfully tender.

Essential Ingredients for Your Maple Bacon Baked French Toast
Crafting the perfect Overnight Maple Bacon Baked French Toast begins with selecting the right ingredients. Here’s a closer look at what you’ll need and why each component is vital for achieving that delightful sweet and savory balance and perfectly fluffy texture:
- Bread: The foundation of any great French toast! For this baked version, you need a sturdy bread that can withstand an overnight soak without becoming mushy. Excellent choices include French bread, Italian bread, Challah, Brioche, or even thick slices of raisin bread for an extra hint of sweetness. Ideally, use day-old bread, as it’s slightly drier and better able to absorb the custard without disintegrating. Slice your chosen bread into generous 1-inch thick slices to ensure they hold up well and absorb maximum flavor.
- Eggs: The heart of the custard! We use a substantial amount of large eggs to create a rich, creamy base that delivers the traditional fluffy texture French toast is famous for. Eggs provide structure and help the bread puff up beautifully during baking.
- Milk (Half-and-half and Whole Milk): For a truly rich and decadent French toast, a thick and creamy batter is essential. This recipe calls for a combination of half-and-half and whole milk, which provides an ideal fat content for richness and flavor. You can substitute whole milk with 2% milk if preferred, but note that this might slightly reduce the overall richness. The creaminess of the milk contributes to a luxuriously soft interior.
- Vanilla Extract and Maple Extract: These extracts are your secret weapons for depth of flavor. Vanilla extract adds a classic warmth, while maple extract amplifies the natural maple notes, making the French toast truly sing. If you prefer a simpler flavor profile, you can omit the maple extract and simply add more vanilla.
- Cinnamon and Nutmeg: These aromatic spices are crucial for that cozy, comforting breakfast taste. Ground cinnamon provides a warm, sweet spice, and freshly grated nutmeg, if possible, elevates the flavor with its intense, fragrant notes. Trust us, the extra effort for fresh nutmeg is always worth it!
- Granulated Sugar: A touch of granulated sugar is added directly to the egg custard mixture to provide a subtle sweetness that balances the savory elements and enhances the overall flavor profile of the French toast itself.
- Brown Sugar: This is a key ingredient for the incredible topping. Brown sugar not only adds a deeper, caramelized sweetness but also helps create a wonderfully slightly crunchy, almost praline-like crust when baked, providing a delightful textural contrast to the soft French toast.
- Bacon: The star of the “maple bacon” experience! Cooked and crumbled bacon is mixed into the topping, delivering a fantastic salty, smoky counterpoint to the sweet maple and custard. In our opinion, bacon French toast is the absolute best, but if you’re vegetarian or simply not a fan, you can certainly omit it.
- Unsalted Butter: Used for both greasing the baking dish and in the topping, butter adds a rich, savory depth and helps achieve that golden-brown finish. Using unsalted butter allows you to control the overall saltiness of the dish, especially with the addition of bacon.
- Maple Syrup: Pure maple syrup is essential for both infusing the topping with its signature sweetness and for serving. Its distinctive flavor is what truly defines this “maple bacon” dish.
One of the best aspects of this recipe is how easily it can be customized. Feel free to skip the maple extract and syrup in the custard for a more traditional vanilla French toast. Replace the bacon in the topping with chopped pecans or walnuts for a nutty crunch, or add a mix of fresh berries for a burst of fruity flavor.
How to Make Overnight Maple Bacon Baked French Toast: A Step-by-Step Guide
The beauty of this breakfast recipe is its incredible ease and minimal active preparation time. It’s the perfect make-ahead dish for those special occasions, like Christmas morning, or any time you want a truly spectacular breakfast without the morning fuss.

Why is My French Toast Soggy? Tips for the Perfect Texture
One common pitfall when making French toast, especially a baked or overnight version, is ending up with a soggy result. This usually happens for two main reasons: your bread is too fresh, or it’s sliced too thin. Fresh bread has a high moisture content and doesn’t absorb the custard effectively, leading to a mushy interior. Thin slices, on the other hand, can quickly become saturated and fall apart. To avoid this, always aim for day-old bread, as its slightly stale nature makes it a sponge for the custard.
Step 1: Prepare Your Bread. Begin by slicing your chosen bread into generous 1-inch thick slices. This thickness is crucial because the bread needs to be sturdy enough to absorb the rich custard overnight without becoming saturated and falling apart. These thick slices will ensure a wonderfully moist interior and a lovely exterior once baked.
Step 2: Prepare Your Baking Dish. Generously butter a 9×13-inch baking dish. While cooking spray is an option, butter not only prevents sticking but also infuses the bottom of your French toast with a little extra buttery goodness and helps create a delicious crust. Set the prepared dish aside.
Step 3: Whisk the Custard. In a large bowl, combine the wet ingredients and flavorings. Whisk together the large eggs, whole milk, half-and-half, vanilla extract, maple extract, granulated sugar, ground cinnamon, ground nutmeg, and kosher salt until everything is well combined and slightly frothy. Ensure there are no streaks of egg white remaining, as a smooth custard is key for even absorption.

Step 4: Dip and Arrange the Bread. Take each slice of bread and dip it into the egg mixture. Gently give the bread a light squeeze. This small action helps the bread begin absorbing the custard and makes it a little more pliable, allowing you to fit all the slices snugly into the prepared baking dish. Arrange the soaked slices in a single layer, or slightly overlapping, in the buttered dish.

Step 5: Overnight Soak. Pour any remaining egg mixture evenly over the top of the arranged bread slices. Cover the dish tightly with plastic wrap or aluminum foil and refrigerate it overnight (for at least 8 hours, up to 12). This overnight soak is absolutely essential! It allows the bread to fully absorb the custard, leading to a deeply flavorful and tender French toast that’s never dry or bland.
Baking Your Overnight French Toast
Step 6: Prepare for Baking. When you’re ready to bake the next morning, remove the French toast from the refrigerator at least 30 minutes before baking. This allows the dish to come closer to room temperature, ensuring more even cooking. While it’s sitting out, preheat your oven to 350 degrees F (175 degrees C).

Step 7: Create the Maple Bacon Topping. In a small bowl, combine the melted unsalted butter, dark brown sugar, maple syrup, ground cinnamon, ground nutmeg, and the pre-cooked and crumbled bacon. Mix these ingredients thoroughly until a thick, gooey mixture forms. This topping is where much of the magic happens, creating a delightful sweet, savory, and slightly crunchy crust.
Step 8: Apply Topping and Bake. Evenly spread the maple bacon topping over the top of the soaked bread slices in the baking dish. Bake, uncovered, for 40-45 minutes, or until the French toast is golden brown, puffed up, and a knife inserted into the center comes out clean. For easy cleanup and to catch any potential drips or spills from the bubbling topping, we highly recommend placing the baking dish on a foil-lined sheet pan during baking.
During baking, your French toast will puff up impressively due to the steam created within the custard. Don’t be alarmed; it will gently deflate upon resting, leaving you with perfectly cooked, tender slices.

Step 9: Rest Before Serving. Once out of the oven, let the baked French toast stand for at least 15 minutes before serving. This resting period is important as it allows the custard to set properly, ensuring that each slice holds its shape and retains its moist texture. Plus, it gives the toppings a moment to settle and intensify their flavors.

Delightful Toppings for French Toast
While our Overnight Maple Bacon Baked French Toast is incredibly flavorful on its own, a few extra toppings can elevate the experience even further. Serve your warm slices with:
- Extra Maple Syrup: A classic for a reason! A generous drizzle of warm pure maple syrup is always a welcome addition.
- Powdered Sugar: A light dusting of confectioners’ sugar adds a touch of sweetness and a beautiful presentation.
- Whipped Cream: A dollop of freshly whipped cream or a swirl of cool whipped topping provides a creamy contrast to the warm French toast.
- Fresh Berries: A handful of fresh strawberries, blueberries, raspberries, or sliced bananas can add a bright, fruity acidity and freshness.
- Chopped Nuts: Toasted pecans, walnuts, or almonds can add another layer of crunch and nutty flavor, complementing the bacon wonderfully.
- Fruit Compote: A warm berry compote or apple pie filling can turn this breakfast into a dessert-like indulgence.
How to Store and Reheat Leftovers
One of the many advantages of this baked French toast is how well it stores and reheats, making it perfect for meal prepping or enjoying throughout the week.
- Refrigeration: Allow the baked French toast to cool completely to room temperature. Once cooled, cover the dish tightly with plastic wrap or transfer individual slices to an airtight, refrigerator-safe container. It will keep well in the refrigerator for 3 to 4 days.
- Freezing: For longer storage, you can freeze leftovers. Cut the French toast into individual servings once cooled. Wrap each slice tightly in plastic wrap, then aluminum foil, or place them in an airtight, freezer-safe container or bag. It can be frozen for up to 1-2 months.
- Reheating:
- From Refrigerator: For best results, reheat individual slices in a toaster oven or air fryer until warmed through and slightly crispy. Alternatively, place slices on a baking sheet and reheat in a preheated oven at 350 degrees F (175 degrees C) for about 10-15 minutes, or until hot.
- From Freezer: Thaw frozen French toast in the refrigerator overnight. Once thawed, reheat as you would refrigerated leftovers. You can also reheat directly from frozen in a conventional oven at 350 degrees F (175 degrees C) for 20-30 minutes, or until thoroughly heated, covering loosely with foil if the topping starts to brown too much.
