  • Choose the Right Pan: The type of loaf pan you use can impact your crust. For a beautifully golden and tender crust, opt for shiny, light-colored pans. Dark-colored pans or those with dark nonstick coatings absorb more heat, which can lead to over-browning or a tougher crust. If you’re using an insulated pan, you might need to extend your baking time slightly.
  • Master the Greasing Technique: To prevent sticking and achieve a smooth finish, it’s best to grease only the bottom of your loaf pan. Greasing the sides can sometimes cause a “rim” around the edges of your baked bread as the batter tries to climb the greased walls. These also keep well for up to 2 months.

Ingredients

  • 2 cups (260g) all purpose flour
  • 1/2 cup (110g) sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 medium ripe bananas, mashed
  • 2 large eggs
  • 1/2 cup (115g) butter, melted (can also use oil of choice)
  • 1/3 cup (78ml) buttermilk
  • 1 teaspoon vanilla

Instructions

  • Preheat oven to 350 degrees (176 C). Grease bottom only of a 9×5 or 8 1/2×4 1/2 loaf pan. Or make a parchment paper sling and place in loaf pan, set aside. 
  • In a large bowl combine the flour, sugar, baking soda, and salt. 
  • In a medium bowl combine the mashed bananas, eggs, melted butter, buttermilk and vanilla. Add to flour mixture and stir just until moistened. Pour batter into prepared pan.  
  • Bake for 55-60 minutes or until a toothpick inserted in center comes out clean. Cool 10 minutes in pan before removing to cool completely. Store completely cooled bread wrapped tightly in plastic wrap at room temperate for up to 4 days. Or refrigerate for up to 10 days.

  1. Some tasty additions you can add (choose one)
    • 1/2-3/4 cup chocolate chips (this is my favorite!!) the recipe pictured here used 1/2 cup semi-sweet chocolate chips with a few extra to sprinkle on top. 
    • 1/2-3/4 cup chopped nuts (toast nuts for even more flavor!)
    • 1 cup fresh or frozen blueberries
    • 1 teaspoon cinnamon (can use this in combination with any of the above suggestions)
  2. Freezer Friendly: Wrap tightly and freeze for up to 3 months.
