  • 1/2 cup Extra virgin olive oil
  • 1/4 cup Fresh lemon juice
  • 1 tsp Lemon zest
  • 1 tsp Italian seasoning
  • 1/2 tsp Kosher salt

  • 1 large Head of Cauliflower 2 to 2 1/2 lbs
  • 1 large Red bell pepper diced
  • 1 large Carrot or more, cut into thin rounds
  • 1/2 cup Red onion diced
  • 1/2 cup Pepperoncini diced
  • 1/4 cup Italian flat leaf parsley chopped

Instructions

Vinaigrette Dressing

  • In a jar with a lid combine the olive oil, lemon juice, lemon zest, Italian seasoning, salt, and pepper. Place the lid on and shake until combined. Set aside for flavors to combine while you make the salad.
